The Alma Mater Studiorum-University of Bologna, participates into this project with its Department of Agricultural Economics and Engineering (DEIAgra) that is a leading institution in Italy in the research fields of agricultural economics and policy, agri-food marketing, agricultural engineering, and territorial planning and mapping. The research group involved mainly work in the research areas of environmental evaluation, marketing of agricultural and food products, farm management and accounting, and rural development. Recent research has been on food safety and security, food quality and traceability, and on consumer acceptance of genetically modified food.
 
The Department is involved in several initiatives funded by the EU, within the Asialink, Equal and Tempus-Phare Programmes, as well as in many further international and national research projects. The research group will be integrated by participants from the Department of Food Science (DiSA) that are the main institution on the research in the Food Science of University of Bologna. This research group involved in the project works in the chemical and sensory analysis with particular interest for food volatiles and phenolic compounds and corresponding sensory impact and related evaluation techniques. The group have also organized several schools for food sensory evaluation for olive oil, honey, cheese and fresh fruit (about ten in the last five years).
